The 2021 Oakville Ranch Cabernet is deeply hued, brooding and perfumed with blackberry bush, freshly laid tar, and wild herbs.  We love mountain fruit for its low pH and high acid, and this wine is no exception.  Hearty, weathered skins protect the fruit from mountain winds, these thicker skins yielding a more structured wine with higher total tannin levels and deeper color.  Cooler fermentation and careful extraction in French oak softens these tannins while maintaining the integrity and character of this prized mountain vineyard.  Housed within this firm structure, a supple body showcases juicy plums, chocolate covered blueberries, licorice, and wild mountain sage.  Mouthcoating in every sense of the word, this opulent wine is seamless from start to endless finish.  Drink now with decanting or over the next several decades with patience.
